Simple Simnel Cupcakes
Try our delicious Easter themed cupcakes this month! Odette and Alise are making some for the village this Easter and they are sure that they will go down a treat!
Alise is adding musical notes made of icing to the top of her cakes whilst Odette is using edible glitter for a swanderful sparkling finish. You can decorate yours too or just serve them as they are!
They're not only swantastically delicious but swantastically simple to make too!
Ingredients:
- 16 oz (450g) marzipan
- 1 1/4 cup (275g) sugar
- 1/2 cup (150ml) sunflower oil
- 3 oz (75g) full fat cream cheese
- 4 tbsp (50g) honey
- 4 medium free range eggs
- 1 tsp vanilla extract
- 1/2 cup (75g) raisins
- 1 cup (150g) currants
- 1 1/4 cup (200g) plain flour
- 2 tsp baking powder
- 2 tsp mixed spice
- powdered sugar, for rolling
Method:
1. Preheat the oven to 180C/350F/Gas 4.
2. Place 12 muffin cases into a muffin tray.
3. Sprinkle some powdered sugar onto a surface, this will prevent the marzipan from sticking.
4. Roll the marzipan out on the sugared surface until it is approx. 0.1 inch (3mm) thick.
5. Carefully cut out 24 discs approximately 2 inches (5cm) wide in diameter. When you have cut out all 24 discs, put them to one side.
6. In a large mixing bowl, beat together the cream cheese, sugar, honey, oil and vanilla until the mixture becomes smooth.
7. Beat the eggs into the mixture until completely combined.
8. Next, stir in the raisins and currants.
9. Sift the flour, baking powder and mixed spice into the mixture and stir until fully mixed.
10. Spoon 1 inch (1-2cm) of cake mixture into each muffin case.
11. Lay one small disc into each muffin case, pressing down slightly to remove any air.
12. Now spoon more of the mixture into each case so that the muffin cases are three quarters filled.
13. Bake for 25-30 minutes or until a skewer poked in the middle comes out clean.
14. Remove the cakes from the oven.
15. Before the cakes cool, take your remaining marzipan discs and place one on each of the cakes, gently pressing it down and around the edges.
You can serve the cakes as they are or add some decoration to the top of each one! You could sprinkle small golden balls onto each one as soon as you have added the marzipan, add a touch of edible glitter or use icing to add Easter themed decorations (or maybe even a white swan!).
Egg-Cellent Marbled Eggs
Our April activity is perfect for Easter and is all about creating swanderfully designed eggs! This activity is great fun for the whole family and also produces swantastic marbled eggs that you can use as Easter decorations!
Odette chose purple and pink for her egg designs, Derek chose blue, with Alise choosing orange and yellow. All of their friends tried the activity too - unsurprisingly JeanBob chose green!
You Will Need:
- White Eggs
- 1 can of shaving foam
- Disposable roasting tin
- Food coloring in your favorite colors!
- Skewers
- Kitchen Roll or paper towels
- Safety Pin
- Toothpicks
- Straw
- Measuring jug/bowl
Method:
Note that this can also be done with hardboiled eggs
1. First, we need to empty the egg. Use the egg box to keep your egg in place and carefully tap and push a hole into the very top of the egg using your safety pin. When the hole has gone through the shell, keep pushing the pin in as far as you can (being very careful) to widen the hole.
2. Now insert the toothpick into the hole and gently stir the insides of the egg to break up the yolk.
3. Use your pin to make another hole on the opposite side to the first one. Carefully, without breaking the shell, use the pin to make this hole slightly bigger than the first one.
4. Insert the toothpick into the new hole and break down the yolk further like you did in step 2.
5. Hold your egg over a measuring jug with the larger hole facing down. Place one end of a straw over the smaller hole and blow from the other end to push out the insides of the egg. This might take a little time and you will notice the white comes out before the yolk so you need to be a little patient! Keep going until nothing else comes out of the egg and you blow out air.
6. Hold the egg under warm, running water to carefully clean the egg out.
7. Use some paper towels to gently dry the outside of the egg then leave the egg to one side to allow it to finish drying inside and out.
8. Repeat steps 1-7 for as many eggs as you would like.
9. When the eggs have dried, take your roasting tin and cover the base completely with shaving foam.
10. Sprinkle drops of food coloring all over the shaving foam.
11. Trace a skewer across the shaving foam to create a marble like effect with the food coloring. The best way to do this is to swirl the skewer from left to right in wavy lines, working your way from top to bottom of the pan.
12. Gently roll each eggshell in the foam so that the shell(s) are completely covered.
13. When they have been covered, place the eggs to one side on some kitchen paper.
14. Leave the eggs for approx. 20 mins.
15. Gently use paper towels to wipe off all of the foam.
Use pens, glitter and paint to add even more designs to your swantastic eggs! You could also add googly eyes to make your very own "egg heads"!
Add some Swan Princess themed ideas for a swanderful and egg-cellent finish!
This April we are celebrating the birthday of the villain we love to hate, Rothbart! This makes Rothbart's zodiac sign Aries and his birthstone a diamond.
Aries are a very strong personality. They are loud, brave, passionate, and strong. They are warm and likeable with a big personality but get bored easily so they are constantly finding new ways to entertain themselves.
They love competition and even more than that they love to WIN competition. This makes them very driven to get exactly what they want out of life.
Aries thrives off attention and thrill-seeking adventures. They have a big presence and love to make an entrance.
Though they are courageous they can also be reckless. Aries are very honest and somewhat tactless, they always say what they're thinking.
The diamond symbolizes strength and has been worn by many powerful people in history, both good and bad, to bring strength and invincibility.
