Happy 4th of July!

To all of our fans in the US, we hope that you have a swantastic 4th of July!

Uberta's Berry Cheesecake

Queen Uberta adores cheesecake and this is one of her favorite recipes!
Delicious and refreshing, this cheesecake is a swantastic desert for the summer months!
For the Cheesecake:
• 250g digestives/graham crackers
• 1/2 cup Butter
• 225g cream cheese (room temperature)
• 500ml heavy whipping cream
• 2/3 Cup Powdered Sugar
• Juice & zest of 1 Lemon
• 3 tsp gelatine powder
• 2 tbsp boiling water
For the Berry Topping:
• 3 tsp gelatine powder
• 2 tbsp boiling water
• 1 can of berries (in syrup)
1. Use a food processor to make fine crumbs from the crackers/digestives. Alternatively, place the biscuits in a sealed freezer bag and crush them by hitting them with a rolling pin (on a suitable surface).
2. Place the crumbs in a small bowl.
3. Melt the butter then allow it to cool.
4. Pour the cooled butter into the fine crumbs and mix until well combined.
5. Take the crumbs and pour them into a lined cake tin. Use the back of a spoon to level the crumbs down.
6. Place the tin into the fridge to set.
7. Whip the cream until soft peaks form (you can do this by hand or with a hand mixer). Then, set it to one side.
8. In a another bowl, add the cream cheese and powdered sugar. Beat together until smooth.
9. Take the lemon zest and juice and place both into the bowl with the cream cheese. 
10. Mix well to combine.
11. Next, dissolve the powdered gelatin in the boiling water and add to the bowl. Stir well.
12. Add the cream to the cream cheese mix and fold together until combined.
13. Pour the cheesecake filling on top of the cheesecake base from earlier and carefully smooth.
14. Place the cheesecake into the fridge for a few hours to set.
15. Blend the berries and strain into a medium sized bowl.
16. Dissolve the gelatin in the boiling water and pour into the berries. Mix until combined.
17. Pour the berry mix on top of the cheesecake.
18. Place the cheesecake back into the fridge to set for at least 4 hours (or overnight).
19. Serve with berries and cream.
4th of July Fun - You have the red, you have the white, why not serve your cheesecake with blueberries to make the ultimate 4th of July desert!

 This month we're celebrating Mei Li's birthday! This makes her astrological sign Cancer and her birthstone the ruby.

Cancer signs are very sensitive and sentimental. Their heart rules over their head. Better in small groups, Cancer signs are known for being fiercely loyal friends and for their good natured sense of humor.

The ruby symbolizes nobility, purity, and passion. This passion is shown in their devotion to the friends, family, and significant others they love so dearly.

Fantastic Fireworks!

Whether you are getting excited for a firework display or want to create your very own at home, this activity is for you!
This activity is great for any time of year or for 4th July celebrations - you can also act out your own version of the fireworks that Derek arranged for Queen Uberta at the end of the second movie from The Swan Princess series!
You Will Need:
• Wooden spoon
• Black card/paper
• Stapler/Tape
• Ribbons (you can also use fabric or crepe paper)
• Scissors
• Star stickers or coloring pencils that will show up on the dark card.
Method:
1. Cut out a circle of paper up to 45cm across.
2. Gently fold the circle in half each way to find the midpoint of the circle (don't press the creases down, you don't want to create permanent creases).
3. Carefully cut from the outside of the circle in a straight line to the midpoint. 
4. Roll the paper into a cone shape and use a stapler/tape/glue to seal it to stop it uncurling. You will need to fit the wooden spoon into the paper cone, so snip off a tiny bit of the cone’s point so that it is just large enough for the spoon handle to fit in to.
5. To make the “fireworks” that will pop out of the cone, cut lengths of ribbon (approx 50cm long) and tie them all together onto the handle of the wooden spoon.
6. Insert the spoon into the cone and tuck all of the ribbons inside so that they are hidden.
7. Decorate the outside with stickers, paint, glitter - anything that takes your fancy! 
Now that you have your firework cone, all you need to do it wave your hands to make the colors fly out from the cone to make a firework display!
