Pretty Pink Princess Cake

Celebrate the new year, a special occasion or just a relaxing day with this pretty pink cake! 
Odette and Alise love to bake and Derek and the rest of their friends and family look forward to tasting any of their delicious treats - you can share this perfect Princess cake with your loved ones too!

Ingredients:
For the Cake:
• 370g cake flour
• 340g granulated sugar
• 1 tablespoon baking powder
• 1 teaspoon salt
• ½ teaspoon baking soda
• 140g egg whites (approx. 3 large eggs), room temperature
• 120ml vegetable oil
• 295ml buttermilk, room temperature
• 170g unsalted butter, softened
• 2 teaspoon vanilla
• 2 drops pink food coloring

For the Cream:
• 115g powdered sugar
• 710ml heavy whipping cream plus 1 teaspoon
• 2 teaspoons powdered gelatin
• 1 teaspoon vanilla extract
• 1 tablespoon cold water

For the Garnish:
• 1 cup fresh raspberries

Method:
1. Preheat the oven to 335 F/170 C.

2. Prepare/Line three 6"x2" cake tins.

3. In a large bowl, mix together the flour, sugar, baking soda, baking powder and salt until combined.

4. Pour the ½ cup of the milk and oil into a smaller bowl and set aside. 

5. In another bowl, whisk together the egg whites, food coloring, vanilla and remaining milk. Set aside.

6. Now take your softened butter and add it to the dry ingredients. Mix until it forms a sand like texture (approx. 30 seconds).

7. Add the milk mixture to the butter mixture and stir until the ingredients become moist. Then continue to mix slightly faster for an extra few minutes.

8. Next add the egg white mixture in three batches, stirring for approx. 15-30 seconds between each addition so that the ingredients are fully combined.

9. Carefully pour the batter into your prepared pans (approx. ¾ of the way full of batter).

10. Bake your cakes for 35-40 minutes until a skewer inserted into the center comes out clean.

11. Allow the cakes to cool for 10 minutes.

12. Turn the cakes out onto a cooling rack to allow them to finish cooling completely.

13. Now we can prepare the cream. Start by sprinkling your gelatin over the water. Allow it to bloom for 5 minutes.

14. Use a microwave to melt the gelatin for 5 seconds. If there are still granules of gelatin after 5 seconds, continue to use the microwave in 2 second intervals until completely melted.

15. Add the extra teaspoon of heavy whipped cream to the gelatin and mix well. Your gelatin should still be warm at this stage. If it has cooled, use the microwave to heat it for another 3-5 seconds.

16. In a large bowl, whip the heavy cream (710ml amount) until soft peaks form.

17. Add the powdered sugar and vanilla and gently mix until fully combined.

18. Next, drizzle in the gelatin and mix gently until stiff peaks form - do not over mix.

19. Place the first cake layer on your chosen serving plate/stand.

20. Spread a layer of the cream over the first layer with a spatula.

21. Carefully place the second cake on top of the cream layer.

22. Add more cream to the new layer before placing the final cake on the top.

23. Add another layer of cream over the top of the cake and around the sides so that all three layers are completely covered.

24. Transfer your cake to the freezer for approx. 10 minutes.

25. Add one more layer of cream to the top of the cake and sprinkle the raspberries over the top.

Pine Cone Fairies

A bit of magic is always something special to behold. These SWANderful fairies will brighten anyone's day and maybe bring you a little luck and magic - don't worry, there's only good magic to be found here!
Remember that magic is always around us and you can even find some magic inside you!

You Will Need:
• Pine Cones
• Card
• Pom Poms
• Felt tip pens
• Glue
• Paint
• Paper Plates
• Scissors

Method:
1. First pour some paint onto a paper plate. Pour some glitter onto a second paper plate.

2. Take your pine cone and gently roll it into the paint so that the color the edges - like layers on a dress!

3. Before paint dries, roll the pine cone into the glitter to add some fairy magic to the "dress".

4. Whilst the pine cone dries, draw a set of wings on your card - you can even decorate the wings with patterns, colors and glitter if you would like to!

5. Carefully cut the wings out.

6. When the pine cone has dried, glue your wings to the back.

7. Use a felt tip pen to draw two dots for eyes and a smiling mouth on your pom pom to make the fairy face before gluing it to the top of the pine cone.

Fancy Flowery Bookmark 

Odette loves to read and get lost in stories! In the winter, she enjoys sitting by the fire with a cup of delicious hot chocolate as the snow falls outside. Our SWANderful Swan Princess also likes to get creative, so these flowery bookmarks combine two of her favorite past times - reading and crafts!
You can use as many colors as you like and even create several bookmark flowers to put in a jar so that your bookmarks turn into a miniature floral arrangement!

You Will Need:
• Popsicle sticks
• Small pom poms
• Glue

Method:
1. First we need to work on the "stem". You can buy colored Popsicle sticks from the store or paint plain ones green. If you decide to paint the sticks, remember to let them dry before you move on to the next step.

2. Now choose a pom pom to be the center of your flower and glue another pom pom to the top to make a petal.

3. Glue another pom pom to the side of your first "petal".

4. Now add the remaining pom poms by continuing to glue them around the central pom pom until you have a ring of "petals".

5. Finish by gluing the flower to the top of your Popsicle stick.
This month we are celebrating the birthday of Lord Rogers! He has a zodiac sign of a Capricorn and the garnet as his birthstone.
Capricorns are known for being responsible, disciplined, and excellent managers of both themselves and others. They have good self control and make wonderful leaders. They also tend to have a bit of a know-it-all attitude that can make them condescending and sarcastic. 
Capricorns like family, tradition, and quality in both people and innovations. Capricorns dislike, well, everything at some point. But that is what makes a compliment from a Capricorn so sincere!
The garnet is a stone that represents and attracts prosperity and abundance. Its beautiful deep red color is a powerful stone that can bring good luck in a new job or in reaching your goals.
